Philosophy
1995 Domaine des Clos was created in 1995
and covers 6 hectares of vines in the appellations of Beaune,
Nuits-Saint-Georges and Chablis.
The Domain itself is situated in the heart of Nuits-Saint-Georges.


Grégoire Bichot’s philosophy was to rule out the use of any chemical pesticides and weed killers when taking over this vineyard, in order to respect the environment
and the Jurassic soils in which the delicacy of Pinot Noir and Chardonnay flourishes
so well. His aim is to encourage the plant’s natural balance so that the fruit can
develop the subtleties and aromas particular to each specific terroir that it grows in.
The harvest itself is a vital moment in the quest for quality and aromatic expression. That is why we pick and sort by

– Red wine vinification still takes place in traditional oak vats. The crop is destemmed and the cap is punched daily or so according to the vintage. Vatting lasts from ten to twenty days, also with the year expression.

– Whites, after slow and gentle pressing to produce a clear juice, are put into barrels for fermentation. For juice from Chablis the alcoholic and malolactic fermentations are done stainless steel tank.

– Maturation takes place in carefully chosen oak barrels, one third of which are new, in order to avoid the vanilla or woody taste that can mask the varietal typicality of the different vineyards that comprise the Côte d'Or.
